Jerome Prevost is based in the Marne Valley and owns just 2.2 hectares of land producing tiny quantities of his stunning wines. He is also one of the few to use Pinot Gris in his Champagnes. He was a student of the famous Anselme Selosse and practices Biodynamic viticulture, harvesting low yields.

He keeps the wines of the skins for as long as possible and uses natural yeasts in the fermentation - adding to the complexity of the wines. He ferments in new and old barrels on the first fermentation and the dosage levels are very low.
