Chamarel is one of the rare distilleries that still runs its own estate to cultivate sugarcane. The cutting process, which lasts from July to December, to this day is done by hand, without ever setting the fields alight. This not only allows the quality of the raw sugarcane to shine through but also reduces the production's harmful impact on the environment. The distillation is done by a combination of alembic and barbet stills, with which only the most excellent quality sugarcane juice is distilled.
