The walnuts used to flavour this wine-based aperitif are picked in late June while they are still green and tender. The recipe, which also contains nutmeg, clove, and pepper is uniquely Provençal and has been produced following the feast of St John for generations. It is made today at Forcalquier distillery which also produces pastis, Genepi, and the peach aperitif RinQuinQuin.
