Behind the El Mayor tequila is the Gonzales family. Located just outside the city of Arandas in the highlands of Jalisco. Destiladora Gonzales has been in production for more than 150 years.After the pinas are harvested they are cooked in autoclave for 24 hours and after the cooked pinas are shredded and a juice is pressed, the agave is then fermented using the families own yeast strain.
