Built in 1855 as the Edinburgh Distillery, the Caledonian was once the largest distillery in Scotland. Affectionately known as ‘the Cally’, the distillery was located in Edinburgh’s West End, near Haymarket station and the Forth & Clyde Canal. Water from the canal was used for cooling.
