Dallas Dhu was founded in 1898 by Alexander Edward, a prominent local distiller, with construction being completed in 1899. The distillery changed hands a couple of times before coming under the wing of the Distiller's Co. Ltd (DCL) in 1929.

It was silent from 1929-36 and, following a fire that destroyed the stillhouse, from 1939-47. It was expanded in the 1960s and 1970s, but was another victim of the DCL cull in 1983.

Since 1988 Dallas Dhu has been a non-working distillery museum and it now seems unlikely to operate as a working distillery again after the license was returned in 1992. However, there is a small chance of it re-opening as apparently most of the distillery apparatus is still in place.

Dallas Dhu is another distillery that had no official bottling during its operating lifetime, but several releases were put out in the mid-1990s for Diageo's Rare Malt series as well as a couple of one-off bottlings for the distillery's Centenary and the Millennium. There have also been several independent bottlings.

The distillery style is complex and tends towards the sweeter end of the spectrum, but the best examples show citrus fruit and intense barley as well.
