A delightful aperitif, Pineau des Charentes is a ‘vin de liqueur’ made by adding unfermented grape juice (‘must’) to Cognac. The white (and most popular) version is usually made with Ugni Blanc, Colombard or Folle Blanche, while red Pineau uses the familiar Bordeaux varieties of Cabernet Sauvignon, Cabernet Franc and Merlot. Along with Floc and Ratafia, produced in other regions in a similar way, they make superb aperitifs or accompaniments to desserts.
