Discarded Spirits Co. is one of the leaders in the sustainable spirits movement, creating drinks out of ingredients that would otherwise have been wasted. The company’s mission is to reduce needless waste from other food and drink production processes — and to unearth undiscovered flavours along the way. Discarded Cascara Vermouth
with Cascara Berries
Cascara is the fruit of the coffee cherry, and innumerable tonnes of it are thrown away every year during the coffee production process. Discarded take this fruit and steep it in a fortified wine which is itself discarded after seasoning whisky barrels, creating a flavourful and complex vermouth.
Bright cherry notes, with rich cacao nibs, roasted coffee and merlot, rounded off with candied figs and cinnamon.
Fruit-forward damson jam and cherry flavours, with deep notes of dark chocolate and roasted coffee giving way to dry red wine and a peppery spiced finish.
Discarded Banana Peel Infused Rum
Rum with Banana Peel
Combining the extract from superfluous banana peels with rum which is used to finish whisky casks before being thrown away, Discarded have created a sumptuously fruity spirit that's like liquid banana bread.
Warm banana bread and treacle, with notes of dried fruit, toasted cinnamon and rich butterscotch.
Rich flavours of banoffee pie and sticky toffee pudding, with deep fruity flavours of milk chocolate raisins and a crystallized ginger finish.
Discarded Grape Skin Chardonnay Vodka
A clean, fruity vodka from Discarded Spirits Co, made using pomace – the skins, stems and seeds of grapes used left-over from the wine-making process – to distill the vodka, alongside wine-alcohol left-over from the making of alcohol-free wine. This creates notes of Williams pear, guava, green apples and almond croissants on the palate.
A clean crisp aroma with fresh green apple notes which then move into deeper almond croissant notes, and a bright lychee lift.
A luscious mouthfeel, with fruit-forward notes of Williams pear, guava and starfruit, then a beautiful pink peppercorn finish.
