- Nose
  
  Polished wood, raisins, sultanas, cinnamon, balsamic vinegar, speculoos biscuits, fennel, dark chocolate, plums, rich earth and a hint of gravel.
- Palate
  
  Waxy with soft fruitiness, sweet apples, woody spice, more dark chocolate, black pepper and a hint of sulphur and smoke. Water brings out creaminess, milk chocolate and more fruit.
- Finish
  
  Good old wood, woody spice and fennel.
- Comment
  
  An elegant old sherried dram, restrained in its raisiny flavours and packed full of fresh fruit and spice.
Producer's Notes
- AROMA WITHOUT WATERMixed spice notes, with defined sweet sherry influences. Some lightly poached pear with a touch of aniseed. Subtle earthy notes with a delicate hint of peat lingering in the background.
  
  TASTE WITHOUT WATERSmooth with defined dark chocolate influences, hints of bonfire embers and a pronounced burst of sherry sweetness. Creamy with a delicate hint of cracked black pepper.
  
  AROMA WITH WATERFreshly ground coffee beans and defined sherry notes emerge with a delicate floral edge. Hints of aniseed and green leaves develop.
  
  TASTE WITH WATERA burst of mixed spices becoming smooth and mouth warming, with a very delicate hint of peat smoke. Herbal influences emerge with a touch of cream toffee lingering.
