    When I asked the guys at the Whisky Exchange on Bedford Street, just off the Strand, whether I might play with types of vermouth in my quest for the perfect DRY gin martini, they pointed me to this brand - and I owe them. With either of my favourite two gins for a martini - Crossbill (from Scotland, just two botanicals) and East London Batch 1 - the "Daring Dry" version of thi Asutralian vermouth works a treat, taking just the finest edge off the raw kick of the spirit without intruding on the palate or nose of the gin. Mind you, I only use half a cap (just a dash) of vermouth on the ice in the shaker before pouring over 3/4 of a cocktail glass of gin. I shake very gently for only 20 seconds and leave to stand for just a further minute before pouring into a chilled glass (which needsto be in the freezer only a few minutes to get really cold). With the minimal ice melt, that delivers a martini which fills the glass to just over the 3/4 mark. I scrape just a half inch of lemon skin off the fruit so that a tiny pfff of zest hits the liquor and drop the teeny bit of peel into the drink.
