For this edition he has raided Merpins – the 20-acre winery that houses Remy's stock of Fine Champagne eaux-de-vie – to create a blend that celebrates the potential of Fine Champagne Cognac. More than 27 years old, this is an intense, well-rounded Cognac with notes of gingerbread, cinnamon, clove, honey and Mirabelle plum.

    Very, very smooth with the slightest of 'kicks' at the very start. Expecting to be more harsh, but it doesn't come. Just left with a warmth in the belly and a clean, sweetness in the mouth.
