The first release in The Dalmore Cask Curation series focusses on the effects of sherry casks on its whisky, with a trio of single malts finished in casks that previously held Vintage, Matusalem and Apostoles sherry from Gonzalez Byass. Inspired by the long voyages of the casks from Jerez to the Scottish Highlands, this set comes in a hand-crafted Saffiano leather case from Florence, Italy, that doubles as a display stand.

The Dalmore 26 Year Old Vintage Sherry Cask Finish
Distilled in 1996 and initially matured in ex-bourbon casks, this characterful single malt was then finished in a 2002-vintage sherry cask from Gonzalez Byass.
Nose
Orange blossom, honey, apricot, Madagascan vanilla and cacao.
Palate
Golden raisins, mandarin citrus, iced cherry cake and sugared almonds.
Finish
Freshly-baked brioche, light roasted coffee, crystallised ginger and warm vanilla.
The Dalmore 28 Year Old Matusalem Sherry Cask Finish
Filled first into ex-bourbon casks in 1994, this whisky was then moved to a rare 30-year-old Matusalem sherry cask.
Nose
Rich dark fruits, Manuka honey, liquorice, sweet tobacco and star fruit.
Palate
Antique sherry-soaked raisins, old English marmalade, marzipan and liquorice.
Finish
Waves of dark cherries, molasses, dark chocolate and cassia bark.
The Dalmore 43 Year Old Apostoles Sherry Cask Finish
A timeless classic, this 1979 single malt started life in ex-bourbon casks and was finished in a 30-year-old Apostoles sherry cask, before being bottled at 43 years old.
Nose
Warm honey, roasted chestnuts, sun-kissed raisins and Seville orange.
Palate
Sweet Madagascan vanilla, dark forest fruits, crushed almonds and dark chocolate.
Finish
Freshly-baked brioche, grilled pineapple and blood orange, with a long, sweet cinnamon finish.
