Product Description

This is a complex and surprisingly dry Orcadian malt, finished in a first-fill pedro ximenez cask and bottled for The Whisky Exchange. Expect aromas of dates, maraschino cherries, buttercream and dried figs, on the nose. The palate sees some of that distinctive floral peat, joined by crab-apple jelly, cranberries and hazelnut.

Tasting Notes

- Nose
  Cherries: candied, glacé, maraschino, compoted and jammed. Sweet dark chocolate, dates, fruitcake, Black Forest Gateau (hold the cream) and stacks of juicy raisins follow. Liquorice and blackcurrant sweets develop, along with mint choc chips, cherry menthol and a hint of singed oak.
- Palate
  The cherries take a backseat to raisins and fruitcake at first, lightly singed in the oven to give a softly fruity smokiness. Dark chocolate notes build and lead to the cherries from the nose, now focused on maraschino and compote. Earthy smoke and green leaves hide underneath.
- Finish
  Smoky oak and cherry jam fade to leave chocolate and gentle spice.
