The earliest domesticated grain and still popular in the Mediterranean, spelt fell largely into anonymity for much of the last century when it came to milling, before being brought back into prominence by artisan bakers. By planting a field of spelt in 2011, Hautes Glaces sought to explore how this ancient grain expresses itself in whisky. First the spelt is malted, before a long fermentation, distillation and ageing in ex-Cognac casks to create a malted spelt whisky with a truly distinctive character.

The concept of terroir in spirits is sometimes contested, but no one would argue that Hautes Glaces' whiskies strive to paint a clear picture of the grains used to make them and the place in which they’re grown. The distillery, high in the French Alps, was founded by agronomist Frédéric Revol, with a mission to revolutionise sustainability, traceability and flavour through his revolutionary and often experimental whiskies.
