Baked apples, almonds and sultanas meet earthy notes of mushrooms and bonfire ashes in this bold young Caol Ila. We selected this cask from dozens of others to represent the feel and flavours of autumn in our limited series, The Seasons. After nine years in a single first fill bourbon barrel, this heavily peated whisky has lost none of its vibrancy, but the natural vanilla and spice notes of top-quality American oak provide a welcome sense of contrast and structure.

Since 1846, this pillar of Islay whisky has built a reputation for quality and consistency. We love old Caol Ilas, but younger expressions like this one have a magic all their own, bringing a vivid sense of place and character, not to mention a powerfully smoky profile. When we sampled this single cask, with its spicy notes and sweet peat, we knew it was the perfect way to kick off The Seasons: Autumn.

To perfectly capture the sense of long, chilly evenings and leaves turning golden, we’ve paired this smoky Caol Ila with a rich and fruity Dailuaine and a heavily peated Ledaig with notes of pumpkin pie and candied ginger. These three whiskies form part of The Seasons, a series of limited-edition bottlings created to embody the flavours of summer, autumn, winter and spring. Each will be limited in number to the outturn of a single cask, presented without chill filtration or added colouring, to preserve the character of the whisky.
