Business partners Mat and Rachael Thomson began their whisky journey in 2009 as independent bottlers, releasing whisky from the closed Willowbank distillery. Shortly after, they started to experiment with smoking barley and home distilling before opening their eagerly-awaited distillery in 2014.

Their creativity and passion for flavour has remained at the centre of Thomson Whisky’s process and has played a crucial role in defining what New Zealand whisky is. They incorporate local ingredients such as manuka wood to smoke the whisky, which imparts a sweet barbecue smoke, as well as a more familiar peat smoke cut from the South Islands.
