The Maegaki family, who run the Kamoizumi brewery, started out as rice farmers who became landlords, then sake producers.
Their sakes tend to be robust and intense with a real umami character. This sake is reminiscent of shitake mushrooms, autumnal, yet has a lift of sweetness on the finish.
