Nose
Rich vanilla custard with a dusting of brown sugar and a handful of dark-but-juicy raisins. Crisp, sweet pastry notes develop, giving a touch of Eccles cake. Stewed apples and a hint of rhubarb crumble build, alongside darker oaky notes.
Palate
Big jammy, fresh and stewed fruit to start: red apples, raisins, quince jam and poached pears. Chocolate biscuits develop (bourbon creams without the cream), along with lots of brown sugar. Hints of char and singed raisin hide underneath.
Finish
Savoury char and raisins are joined by bittersweet dark chocolate.
