A long-awaited Whisky Exchange exclusive rum. Bottled in collaboration with the well-respected independent rum bottler Holmes Cay (pronounced "key"), this is a 12-year-old rum from the now closed Ten Cane distillery in Trinidad. Distilled in 2012, this rum was made with fresh cane juice as opposed to molasses, bringing a brighter and fresher character. It spent 4 years aging in ex-cognac casks in the Caribbean before being transferred to the UK for a further 5 years in ex-rum casks, and then another 3 years in New York. Bottled at cask strength, this rum promises to be a must-have for rum enthusiasts. The nose bursts with aromas of honey, lemon tart, and toffee, leading to flavours of cream, bananas, toffee, and baking spice on the palate.
