The Heart Cut is born from the passion that husband-and-wife duo Georgie and Fabrizio share for whisky – talking about it, drinking it, and discovering it. They personally travel the world, select casks and collaborate with producers to create their ever-growing range of single-cask and small-batch whisky, each showcasing truly flavour-forward, idiosyncratic whiskies. This independent, hands-on curation has resulted in The Heart Cut being awarded Best Independent Bottler in the World at the World Whisky Awards in 2024 and 2025.
Fielden is a 100% English rye whisky, which has spent just over two years finishing in a 45-year-old ex-solera oloroso sherry cask from Sanlúcar de Barrameda, picking up a coastal minerality from the Atlantic winds. It’s rich, luscious and spicy, with honeycomb and banana chips layered over waves of sea-salted caramel. Produced by a distillery that champions regenerative farming, it perfectly exemplifies the type of unique, highly individual producer this independent whisky bottler constantly seeks out.

Nose
Salted caramel, rum n' raisin fuge and marzipan, all covered with creamy porridge, brown sugar and a drizzle of very dry oloroso sherry. Fruit develops, with the raisins joined by sultanas, baked apples, white-wine-poached pears, chocolate-covered oranges and chocolate lime sweets.
Palate
Stacks of sherry: it's like an oloroso fortified with rich rye whisky...which is sort of what it is. Damp warehouses, raisins, dark chocolate, milk chocolate, fruit cake, walnut bread, caramel sauce, brown sugar and baking spice, with hints of green leaves and mint at the back.
