Product Description

A new and exciting limited release from Tomatin distillery, and their peated line of Cu Bocan whiskies. This new bottling in their Creation series is a first in Scotch whisky, the maturation of peated whisky in Canadian ice wine casks. Ice wine is a sweet wine, made by leaving the grapes on the vine in freezing temperatures, allowing the water to crystallize, thus highly concentrating the sugars. The ice wine casks were then married with whisky maturing in Verdejo casks, a Spanish white wine. Thus creating a balance of smoke and sweet fruitiness. Limited to just 3,600 bottles worldwide, it is bottled at 46% abv.

The nose brings together a light peat smoke with cooked apples, pears, and peaches layered by orange citrus, and fennel. Moving into honeycomb, peaches, apricots, pineapples, and candied citrus supported with an undercurrent of peat smoke on the palate, all leading to a smoky honey and citrus finish.
