Single Malt Scotch Whisky
Brothers Simon and Philip Thompson ran the first single malt spirit from the stills at Dornoch Distillery in 2017. Located in a former fire station on the grounds of Dornoch Castle, a whisky hotel in the Scottish highlands, the aim is to produce spirit using traditional distillation methods used in the 1940s-1960s.
