Irish single malt gives the lie to the notion that all Irish whiskey is triple-distilled – Cooley’s malts all undergo double distillation, while Midleton produces no single malt at all. Only Bushmills is officially triple-distilled – although the process is so complex that some of the liquid probably gets distilled half-a-dozen times, resulting in a light but deceptively complex spirit.
