Product Description
Exclusive to The Whisky Exchange, this single cask whisky is made from organic Scottish barley and fermented for up to 114 hours to create a high-ester spirit brimming with flavour. It was matured in a first-fill ex-bourbon cask before being finished in an ex-Tequila cask, imparting green, floral and vegetal aromas of Padron peppers, wildflowers and citrus on the nose. This is followed by a rich, creamy texture with notes of lemon curd, tinned peaches, cracked white pepper and nutmeg on the palate.

Nose
Lime and vanilla with a dusting of white pepper. Cinder toffee follows along with white chocolate (the good stuff), creamy milk chocolate, sultanas, and lemon posset, drizzle cake and candied peel. Buttery shortbread and Garibaldi biscuits follow along with a delicate thread of meadow flowers.

Palate
Buttery grain, candied lemon peel and butterscotch lead. Rich orange notes follow, along with apple sauce, peach and the white pepper from the nose. Toffee builds along with a touch of sweet yellow capsicum.

Candied citrus and pear drops lead to subtle hints of sesame with honeycomb and white florals on the nose.

A sweet and creamy texture with notes of lemon meringue pie, salted caramel and crisp apple, complemented by freshly-baked lemon muffins.

Crafted Slowly
This bottling is part of the Aon collection – meaning 'one' in Gaelic – which comprises hand-picked single casks of unique character. Though Nc'nean's rise to prominence has been remarkably rapid, at the distillery itself they like to take things slow. This applies to malting organic Scottish barley, fermenting with high-ester yielding yeast, and distilling slowly – which allows for more copper contact and results in a clean and fruity new-make spirit. For this release, that spirit was aged in a first-fill bourbon barrel and then matured for an additional two years in an ex-Tequila cask, which has added a subtle vegetal character to the whisky.
