Product Description
Mezonte is an organization dedicated to preserving and communicating the traditions and values of traditional agave spirit-producing communities.
Cabo Corrientes is a historic centre of raicilla production, and Hildegardo Joya ("Japo") was one of the last producers of his generation still crafting this spirit in the region. Sadly, he passed away this year at the remarkable age of 100, making this one of the last spirits touched by his hands. He harvested only three agave varieties: Cenizo, Verde and Amarillo. The agave is cooked in deep cylindrical ovens, a slower and gentler process that help bring the fruit character. Fermentation lasts for more than 28 days, allowing wild yeasts and bacteria to play a significant role in developing complexity. The spirit is then distilled in copper pot stills, producing some of the most complex raicillas in the region.
On the nose, you find notes of menthol, yoghurt, delicate florals, porcini and subtle mineral undertones. The palate is elegant and layered, with pronounced umami character, ume plum and eaux-de-vie fruit notes. A beautifully crafted spirit.
