Product Description
A 2005 Caol Ila single malt that was matured in a single refill sherry hogshead for 15 years, before being bottled in January 2021 by Gordon & MacPhail, exclusively for The Whisky Exchange. Aromas of autumn spices, aniseed, stewed plums and bonfire embers fill the nose, complemented by notes of black pepper, baked apples, sultanas and toasted oak throughout the palate, with hints of smoke lingering in the finish.

Tasting Notes
Tasting Notes
Billy Abbott, The Whisky Exchange
Nose
Singed fruit cake and liquorice sticks lead, with sea-side ozone, breaking waves and cold cast-iron stoves to follow. Burning leaves build along with buttered toast, tar, lime, sweet and spicy baked apples.
Palate
Rich and thick, with mint, raisins and cherry slowly enveloped by damp peat smoke, dark chocolate and lime jelly. Leafy notes develop – freshly fallen pine needles and autumnal forest floors. Spiced shortbread, fiery aniseed balls and tarry liquorice linger.
Finish
Mint and lemon jelly, chocolate lime sweets and tingling spice slowly fade.

What a treat!! Sherry + Peat in a Refill Hogshead = Bliss in a glass. Everyone should have a bottle like this in your bar.
This distillery just makes great whisky, this bottle is seriously good, lots of sweetness from the Sherry and that underlying smoke is a pleasure. You won’t be disappointed
