A 2007 Kilchoman single malt bottled in February 2021 exclusively for The Whisky Exchange after 13 years in a single ex-bourbon cask. Aromas of baked-hay, Golden Delicious apples, lemon bon-bons and roasted corn on the cob fill the nose, complemented by notes of barbecued meats, orchard fruits, green chilli and cacao nibs throughout the palate.

Tasting Notes

    • Nose

      Singed orange peel, smoky toffee, roasted apples, sweet peat smoke and gentle jamminess lead to salted caramel, preserved lemons and spiced sponge cake dotted with sultanas and brown sugar.

    • Palate

      Tarry smoke leads, followed by more salted caramel and sweet citrus: barbecued lemon and lime. Hints of mint and liquorice develop, becoming more green, leafy and singed: burning pine needles.

    • Finish

      Stony minerality and singed pine linger, with lime jelly, dark chocolate and earthy smoke slowly fading.

      The palate has a lovely intensity and texture with flavours of smoked BBQ meat and juicy orchard fruits, graduating to sweet green chilli and roasted cacao nibs on the finish.

Kilchoman is one of Islay’s youngest distilleries, distilling its first spirit in 2005. Based on Rockside farm on the Rhinns in the west of the island, they are the only whisky maker on Islay to both grow some of their barley and malt it right on the farm. While they have grown over the past few years, they remain the smallest distillery on the island, dedicated to making richly flavoured peaty whiskies. We have been fans of Kilchoman’s whisky since their first releases and are proud to have worked with them to bottle a carefully curated collection of single casks.
