Product Description
Mezonte is a terrific indie bottler for all manner of agave, and here they're shining a spotlight on an agavero from Tolimán in southern Jalisco. Using wild Alineño and Cimarrón varieties, this agave spirit is produced in a super traditional manner, milled by hatchet and hammer on a stone floor. It’s naturally fermented in volcanic stone then cooked for 3-5 days in an earthen pit over mesquite wood and distilled in a traditional Filipino-style hybrid still. The still features a copper bowl base and a hollowed-out parota tree trunk, including bagasse. It tastes distinctly minerally and dry, with faintly tropical fruit and a sweet, barbecue quality to the smoke.
